Thoughts on Thailand

As we prepare to head home in a little more than 24 hours, I can’t help but reflect on our trip. Here’s a list of a few things that come up over and over again in my head.

  • Coconut pancakes, coconut pancakes, coconut pancakes!!!
  • Fresh coconut juice drank straight from a freshly opened coconut
  • Vegetarian-friendly food everywhere!
  • Fresh (exotic) fruit on every corner
  • Did I mention the food is amazing?
  • Super-friendly people (as well as dogs and kitties, which are everywhere!)
  • If we didn’t have internet at home, I would love to spend more time in internet cafes!
  • Lush foliage is everywhere and is gorgeous!

This is just a short list of all the amazing things I’ve experienced on our trip to Thailand. We love it so much that we hope to return again someday in the near future.

My time is running out, as we are flying back down to Bangkok in about an hour. See you again soon!

  3. Have you ever managed to get back to Thailand since 2007? We’ve been six times in the last seven years. Can’t get enough of it. Never tried the coconut pancakes but we did fall in love with the banana roti made by the muslim ladies with their bicycle carts. That became our staple dessert everywhere we went, then we found that you can’t get them in the south, which is where most of the muslims are. Go figure.
